Ingredients
  

  • 4 pounds beef chuck roast cut into 3-inch chunks
  • 10 guajillo chiles
  • 5 ancho chilies
  • 3 arbol chilies very hot may want to use chile adobo instead
  • 2 Roma tomatoes
  • 1 white onion quartered
  • 6 garlic cloves unpeeled
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried Mexican oregano
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 3 bay leaves
  • Optional: chopped onion, cilantro, and lime wedges for serving.

Instructions
 

  • Slice the stems off the chilies and shake out the seeds. Then, give them a quick rinse to remove any dust or dirt from the outside.
  • Simmer the chilies. In a medium pot, add the guajillo chilies, ancho chilies, arbol chilies. Cover completely with water and bring to a simmer over medium heat. Simmer for 15 minutes, until the chilies have softened.
  • While the chilies are simmering, add the tomatoes, onion, and garlic cloves to a quarter sheet pan. Broil them for 4 to 6 minutes, until lightly charred.
  • Transfer the chilies and 1 cup of the remaining water to a high-powered blender. Remove the garlic from it’s peel and add it to the blender along with the tomatoes, onion, broth, vinegar, cumin, oregano, cloves, cinnamon, and ginger. Blend on high for 1 to 2 minutes, until completely smooth.
  • Place the beef chunks in the slow cooker. Pour the birria sauce on top, and add the bay leaves. Use tongs to gently mix it all together. then cover. Cook on low for 8 to 9 hours, or on high for 4 to 5 hours. The beef should be tender and fall apart easily when shredded with a fork. If it doesn’t shred easily, cook it a bit longer.
  • Discard the bay leaves. Remove the beef to a cutting board and use two forks to shred it.
  • Place the shredded beef back in the slow cooker, give it a stir, and let it absorb the liquid (aka consommé).
  • Serve the birria straight from the slow cooker for a variety of meals (see ideas above) or transfer to bowls with the consommé for a traditional birria stew. Garnish with chopped onion, fresh cilantro, and a squeeze of lime juice.

Thai Basil Beef Stir Fry

Prep Time 35 minutes

Ingredients
  

  • cups long-grain white rice
  • 4-6 tablespoons mother sauce (see sauce recipe below)
  • 2 tablespoons fresh lime juice plus lime wedges for serving
  • 2 tablespoon sesame oil
  • pounds ground beef or sirloin beef strips
  • 2 scallions thinly sliced
  • 1 cup cut broccoli
  • 1 cup carrots julienned
  • 1 bell pepper sliced
  • 1 tablespoon fresh chopped ginger
  • 2 Fresno chile peppers halved lengthwise, seeded and thinly sliced
  • 1 cup snow peas
  • 2 cloves garlic chopped
  • 2 cups fresh basil leaves
  • 1.5 cup beef broth

Mother Sauce

  • Sugar – ½ cup
  • Fish Sauce – ½ cup
  • Thin Soy Sauce – 3 oz
  • Seasoning Sauce – .5 oz Dark Soy Sauce
  • Oyster Sauce – 20 oz
  • Garlic Powder – 1 tsp
  • Black Pepper – 1 tsp

Instructions
 

  • Cook the rice as the label directs. Set aside off the heat, about 5 minutes, then fluff with a fork.
  • Meanwhile, combine the sugar, fish sauce, soy sauce, oyster sauce, garlic powder, and black pepper in a sauce pan for the mother sauce. Simmer for 20-30 minutes on low heat.
  • Heat the sesame oil in a large nonstick skillet over high heat. When the oil is hot, crumble the beef into the skillet and cook, undisturbed, until slightly crisp on the bottom, 2 to 3 minutes. Cook, stirring with a wooden spoon to break up the meat, until cooked through, 1 to 2 more minutes. Remove to a paper towel-lined plate with a slotted spoon. Discard the fat in the skillet and wipe the skillet clean.
  • Return the skillet to medium-high heat and add remaining sesame oil, chopped garlic and ginger; sauté for 1-2 minutes. Add scallions and chiles sauté for another minute, then add broccoli, carrots, mothersuace, and beef broth. Cook, at medium heat for several minutes until vegetables are cooked but still slightly crisp.,
  • Next, add the cooked beef and the remaining beef broth (as needed).
  • Remove from the heat and add the basil. Stir until just wilted, 30 seconds to 1 minute.
  • Divide the rice among shallow bowls. Spoon the stir-fry on top Serve with lime wedges.

  • 1 small fresh pineapple or 1/2 large one, cored and cut into small wedges/pieces
  • 1 mango peeled and cut into small cubes
  • 1 peach sliced and cut into smaller pieces
  • 1 nectarine sliced and cut into smaller pieces
  • 1/2 pound strawberries hulled and quartered
  • 1 medium-size package about 11 ounces fresh blueberries
  • 1 tablespoon finely chopped or julienned fresh mint leaves
  • 2 tablespoons honey
  • 1 teaspoon orange zest
  • 1 teaspoon lime zest
  • 2 tablespoons fresh-squeezed orange juice
  • 1/2 tablespoon fresh lime juice

Instructions
 

  • Add all the cut fruit to a large bowl, and if not cold already, chill for about 30 minutes.
  • Prepare the citrus-honey dressing by adding all of the ingredients to a small bowl and whisking them together until well-combined; use immediately, or keep covered and refrigerated until ready to use. (Best used as soon as possible after being prepared for best flavor.)
  • To assemble the fruit salad, pour the dressing over the fruit, and sprinkle in the julienned/chopped mint; toss everything together, and serve immediately. (If making slightly ahead, you can just keep the cut fruit in a bowl in the fridge, and when ready to serve, toss with the citrus-honey dressing and the mint, and serve.)

  • 3 cups 15 ounces all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • cups 8¾ ounces granulated sugar
  • 4 large eggs
  • cups extra-virgin olive oil
  • 1 cup plain whole-milk yogurt
  • 1 tsp vanilla extract
  • Zest from one orange or lemon

Orange or LEMON GLAZE

  • 2-3 tablespoons orange or lemon juice
  • 1 tablespoon plain whole-milk yogurt
  • 2 cups 8 ounces confectioners’ sugar

Instructions
 

  • Adjust oven rack to lower-middle position and heat oven to 350 degrees. Grease 12-cup nonstick Bundt pan. Whisk flour, baking powder, and salt together in bowl. In separate large bowl, whisk sugar and eggs together until sugar is mostly dissolved and mixture is pale and frothy, about 1 minute. Whisk in oil and yogurt until combined. Using rubber spatula, stir in flour mixture until combined and no dry flour remains.
  • Pour batter into prepared pan, smooth top, and gently tap pan on counter to settle batter. Bake until cake is golden brown and wooden skewer inserted into center comes out clean, 40 to 45 minutes, rotating pan halfway through baking.
  • Whisk 2 tablespoons lemon juice, yogurt, and confectioners’ sugar together in bowl until smooth, adding more lemon juice gradually as needed until glaze is thick but still pourable (mixture should leave faint trail across bottom of mixing bowl when drizzled from whisk).
  • Let cake cool in pan for 10 minutes, then gently turn cake out onto wire rack. Drizzle half of glaze over warm cake and let cool for 1 hour.
  • Drizzle remaining glaze over cake and let cool completely, about 2 hours. Serve.
