Birria

Ingredients
  

  • 4 pounds beef chuck roast cut into 3-inch chunks
  • 10 guajillo chiles
  • 5 ancho chilies
  • 3 arbol chilies very hot may want to use chile adobo instead
  • 2 Roma tomatoes
  • 1 white onion quartered
  • 6 garlic cloves unpeeled
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried Mexican oregano
  • ½ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 3 bay leaves
  • Optional: chopped onion, cilantro, and lime wedges for serving.

Instructions
 

  • Slice the stems off the chilies and shake out the seeds. Then, give them a quick rinse to remove any dust or dirt from the outside.
  • Simmer the chilies. In a medium pot, add the guajillo chilies, ancho chilies, arbol chilies. Cover completely with water and bring to a simmer over medium heat. Simmer for 15 minutes, until the chilies have softened.
  • While the chilies are simmering, add the tomatoes, onion, and garlic cloves to a quarter sheet pan. Broil them for 4 to 6 minutes, until lightly charred.
  • Transfer the chilies and 1 cup of the remaining water to a high-powered blender. Remove the garlic from it’s peel and add it to the blender along with the tomatoes, onion, broth, vinegar, cumin, oregano, cloves, cinnamon, and ginger. Blend on high for 1 to 2 minutes, until completely smooth.
  • Place the beef chunks in the slow cooker. Pour the birria sauce on top, and add the bay leaves. Use tongs to gently mix it all together. then cover. Cook on low for 8 to 9 hours, or on high for 4 to 5 hours. The beef should be tender and fall apart easily when shredded with a fork. If it doesn’t shred easily, cook it a bit longer.
  • Discard the bay leaves. Remove the beef to a cutting board and use two forks to shred it.
  • Place the shredded beef back in the slow cooker, give it a stir, and let it absorb the liquid (aka consommé).
  • Serve the birria straight from the slow cooker for a variety of meals (see ideas above) or transfer to bowls with the consommé for a traditional birria stew. Garnish with chopped onion, fresh cilantro, and a squeeze of lime juice.

  • ¼ cup extra virgin olive oil
  • ¼ cup freshly squeezed lime juice
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lime zest
  • 1 tablespoon honey
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste
  • 16 ounce bag pre-shredded coleslaw mix discard any dressing that comes with the mix
  • ¼ cup cilantro finely chopped
  • ¼ cup purple onion thinly sliced
  • 1 jalapeño deseeded and cut into slices

Instructions
 

  • In a small bowl or jar with a lid, whisk together the ingredients for the dressing until well combined.
  • In a large mixing bowl, add the pre-shredded coleslaw mix, cilantro, purple onion, and jalapeño.
  • Pour the dressing over the slaw mixture and toss everything together until evenly coated.
  • Serve immediately or refrigerate for an hour to let the flavors meld together.

Mascarpone Stuffed French Toast

Ingredients
  

For the Filling

  • 225 g 8 oz mascarpone softened
  • 60 ml ¼ cup pure maple syrup plus extra for serving
  • 1 teaspoon vanilla extract

For the French Toast

  • 4 large eggs
  • 240 ml 1 cup whole milk or half-and-half
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 12 slices thick-cut brioche, challah, or Texas toast
  • 3 tablespoons salted butter plus more as needed
  • Butter, maple syrup, and fresh fruit for serving

  • Prepare the Filling
  • In a mixing bowl, beat the softened mascarpone, maple syrup, and vanilla extract with an electric mixer until smooth and creamy. Set aside.
  • In a separate large bowl, whisk together the eggs, milk (or half-and-half), cinnamon, and vanilla extract until fully combined.
  • Assemble the Sandwiches
  • Spread about 2 tablespoons of the mascarpone mixture onto one slice of bread, leaving a small border around the edges. Place a second slice on top and gently press to seal. Repeat with the remaining bread and filling.
  • Soak the Bread
  • Dip each stuffed sandwich into the egg mixture, turning it a few times to ensure both sides are well coated. Let it soak briefly while you prepare the pan.
  • Cook the French Toast
  • Heat 1 tablespoon of butter in a large skillet over medium-low heat. Place one or two soaked sandwiches in the pan (depending on size) and cook for 3–4 minutes per side, until golden brown and crisp. Keep the heat moderate to prevent burning while allowing the center to heat through.
  • Add more butter as needed and repeat with the remaining sandwiches.
  • Serve
  • Slice each stuffed French toast diagonally. Arrange three halves per plate. Top with fresh berries, a pat of butter, and drizzle with maple syrup. Serve immediately.

  • 2 Tbsp Bonne Maman Wild Blueberry Preserves
  • 1 Can of Lime Sparkling Water
  • 1 Thai Basil Sprig 2 Leaves Reserved
  • 1 Lime ½ Juiced, & ½ Sliced for Garnish

Instructions
 

  • In a drink shaker, add lime juice, Thai basil and Bonne Maman Wild Blueberry Preserves— and crush with a muddler.
  • Add enough ice to fill the shaker plus a generous splash of sparkling water.
  • Cover tightly, and shake vigorously for about 30 seconds.
  • Empty contents into 2 hi-ball glasses, and top with the Thai basil leaves and more sparkling water.
