Quinoa Power Salad

Ingredients
  

  • 1 cup uncooked quinoa or 2 cups cooked quinoa
  • 2 cups chicken or veg broth to cook with or water
  • 15 oz chickpeas drained and rinsed
  • 1 cup chopped red onion
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1 cup chopped baby spinach or Kale or chopped salad greens
  • 1 cup flat leaf parsley chopped
  • or cilantro or basil chopped
  • 1 large carrot chopped
  • 1 cup edamame
  • ½ cup olive oil
  • 3 Tbsp lemon juice
  • 3 Tbsp white vinegar or apple cider vinegar
  • 1 Tbsp maple syrup or honey
  • 3 garlic cloves minced
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions
 

  • Cook 1 cup of uncooked quinoa with 2 cups or water or broth (optional). This should make about 2-3 cups of cooked quinoa. Let cool completely before making the salad.
  • Chop 1 cup red onion, 1 cup cucumber, 1 cup tomatoes into small pieces. The smaller the better! Roughly chop the 1 cup spinach and 1 cup parsley/basil/cilantro (depends on preference) as well. Chop 1 large carrot or 1/2 cup baby carrot.
  • Prep the Salad Dressing: Add ½ cup olive oil, 3 Tbsp lemon juice, 3 Tbsp white vinegar, 1 Tbsp maple syrup, 3 minced garlic cloves, ½ tsp salt and ¼ tsp ground black pepper to a bowl. Whisk together.
  • Add the cooled 2 cups cooked quinoa, 15 oz canned drained chickpeas, 1 cup spinach/kale, 1 cup parsley or other herbs, 1 cup edamame, 1 cup chopped cucumbers, 1 cup tomatoes, 1 cup red onion, and 1 large chopped carrot to a large salad bowl. Toss together.
  • Pour the salad dressing over top and mix into the salad until evenly coated. Serve immediately or store in the fridge until ready to serve.

Grilled Marinated Beef Tenderloin

Grilled Marinated Beef Tenderloin with Avocado Corn Relish

Ingredients
  

  • 1/2 cup cumin seeds Or Coriander seeds still awesome
  • 4 jalapeño peppers halved and seeded
  • 3 cloves garlic
  • 4 teaspoons cracked black pepper
  • 1 1/2 teaspoons salt
  • 1/3 cup lime juice from about 4 limes
  • 2 cups coarsely chopped cilantro leaves and stems
  • 1 cup olive oil
  • 3 pounds skirt steak trimmed of excess fat and cut into 6 pieces
  • Avocado Corn Relish (see separate recipe)
  • 12 flour tortillas heated

Instructions
 

  • In a small, heavy frying pan, toast the cumin seeds over moderately high heat, shaking the pan, until fragrant, about 30 seconds. Transfer the cumin seeds to a blender.
  • Add the jalapeños, garlic, black pepper and salt to the blender and puree with the lime juice until the cumin seeds are finely ground. Then add the cilantro and oil and puree until smooth.
  • Rub the meat all over with some of the marinade and roll each piece into a cylinder. Arrange the meat in a shallow glass dish or stainless-steel pan. Pour the remaining marinade over the meat. Cover and marinate in the refrigerator for 24 to 48 hours. About 30 minutes before cooking, remove the meat from the refrigerator and unroll each steak.
  • Light the grill or heat the broiler. Grill or broil the steaks for 3 minutes. Turn the meat and cook to your taste, about 3 to 4 minutes longer for medium-rare. Transfer to a carving board and let rest in a warm spot for 5 minutes. Slice the steaks across the grain and on the diagonal. The slices should be about 1/4 inch thick. Serve with the Avocado Corn Relish and warm flour tortillas.

Avocado Corn Relish

Ingredients
  

  • 2 poblano chiles OR 2 large Jalapeños
  • 6 tablespoons olive oil
  • 2 cups fresh cut from about 3 ears or frozen corn kernels
  • 3/4 teaspoon salt
  • Fresh-ground black pepper
  • 1 avocado preferably Hass
  • 1/2 red bell pepper cut into 1/4-inch dice
  • 2 scallions including green tops cut into thin diagonal slices
  • 1/4 cup red-wine vinegar

Instructions
 

  • Roast the chiles over an open flame or broil them, turning with tongs until charred all over, about 10 minutes. When the chiles are cool enough to handle, pull off the skin. Remove the stems and seeds. Cut the chiles into 1/4-inch dice and transfer to a large bowl.
  • In a large frying pan, heat 4 tablespoons of the oil over moderate heat. Add the corn kernels, 1/2 teaspoon of the salt and 1/4 teaspoon black pepper. Sauté the corn kernels, stirring occasionally, until just cooked, about 5 minutes. Add them to the roasted chiles.
  • Cut the avocado into 1/4-inch dice and add to the corn with the bell pepper, scallions, vinegar, the remaining 2 tablespoons oil and 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Stir and let sit at room temperature for 25 minutes so that the flavors blend.

  • 2 cups baby spinach leaves
  • 1 orange peeled and sliced into segments
  • 1 ruby grapefruit peeled and sliced into segments
  • 1 avocado peeled, seed removed, sliced into segments
  • ½ small shallot sliced into rings
  • ¼ cup toasted hazelnuts roughly chopped
  • ¼ cup pepitas
  • 4 medjool dates sliced into rings
  • Kosher salt and black pepper to taste

FOR THE VINAIGRETTE

  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon fresh juice or orange grapefruit
  • ½ teaspoon Dijon mustard
  • ½ teaspoon honey
  • ½ small shallot peeled and minced
  • ¼ teaspoon kosher salt
  • teaspoon ground black pepper

Instructions
 

  • In a mixing bowl, toss together spinach, citrus segments, avocado, shallot, hazelnuts, pepitas and dates.
  • In a separate bowl, whisk together the vinaigrette ingredients and toss with salad.
  • Divide between 2 plates.

  • 1 tablespoon Granulated sugar

Instructions
 

  • Wash and hull the fresh strawberries.
  • Combine strawberries, granulated sugar, lemon juice, vanilla extract, and mint leaves in a blender or food processor.
  • Blend until smooth or to your desired consistency.
  • Taste and adjust sweetness if necessary.
