Frittata with Greens, Tomato, and Feta
Ingredients
- 4 large eggs
- ½ 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
- 1 Tbsp. 1% low-fat milk
- ¼ tsp. kosher salt
- ¼ tsp. black pepper
- 1 tsp. olive oil
- 1 plum tomato thinly sliced
- 2 Tbsp. crumbled feta cheese
- Fresh basil leaves or chopped fresh parsley optional
Instructions
- Preheat oven to 400°F.
- In a medium bowl, whisk together eggs, spinach, milk, salt, and pepper. Set aside.
- Heat oil in a medium-size ovenproof skillet over medium heat.
- Add egg mixture, and cook, stirring constantly, until eggs begin to set, about 2 minutes.
- Top evenly with tomato slices and feta.
- Bake until set and top is golden brown, about 10 minutes.
- Top with fresh basil leaves once removed from oven to serve
- Cut frittata into wedges and serve immediately.

Sheet-Pan Berry Pancake
Ingredients
- Nonstick cooking spray
- 1/2 tsp. ground cinnamon divided
- 2 cups all-purpose flour
- 1 cup whole wheat flour or all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 4 eggs
- 1 1/2 cups buttermilk
- 1/4 cup salted butter melted
- 1/4 cup pure maple syrup
- 1 Tbsp. vanilla
- 3 cups fresh or frozen blueberries raspberries, and/or sliced strawberries (tip, opposite), divided
- 2 Tbsp. granulated sugar
- Powdered sugar optional
Instructions
- Preheat oven to 400°F. Coat a 15×10-inch baking pan with cooking spray. Line bottom of pan with parchment paper.
- In a medium bowl whisk together 1/2 tsp. of the cinnamon and next five ingredients (through salt). In a large bowl whisk together next five ingredients (through vanilla).
- Stir flour mixture into buttermilk mixture just until combined. Gently fold in 2 cups of the berries. Pour batter into prepared baking pan; spread evenly.
- Arrange remaining berries on top of batter. Combine sugar and remaining 1/4 tsp. cinnamon. Sprinkle over berries. Bake until edges are golden brown and a toothpick comes out clean, 25 minutes. Let cool in pan on a wire rack 10 minutes. Sift powdered sugar over pancake (if using). Cut into 12 squares and serve with additional maple syrup.

Ingredients
- 2 oz freshly squeezed orange juice
- Splash of Grand Marnier
- 2 oz Dry Brut Champagne or Prosecco chilled
Instructions
- Use Fresh Juice: Freshly squeezed orange juice offers a brighter, less bitter taste than store-bought. Ensure it is pulp-free.
- Keep it Cold: Keep both the wine and juice in the refrigerator until the last moment to ensure the drink is crisp.
- In a champagne flute combine orange juice, and Grand Marnier.
- Top with Champagne or Prosecco.
- Make it a Pitcher:
- Combine 1 bottle of Champagne or Prosecco with 3 cups of freshly squeezed orange juice in a pitcher for large groups, adding sliced fruit for garnish

Banana Bread
Ingredients
- 2 overripe bananas
- 2 eggs
- 3 tablespoons coconut oil melted
- ¼ cup plain Greek yogurt
- 1 tsp pure vanilla extract
- ½ cup maple syrup
- 1 tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- 1½ cups oat flour
- ½ cup macadamia nuts crushed
Instructions
- Preheat oven to 350F (180C).
- Peel over-ripe bananas and break into a bowl. Use a fork to mash up pieces until creamy.
- Crack eggs into a separate bowl and whisk
- Pour whisked eggs into bowl with mashed bananas and stir to combine.
- Pour in melted coconut oil, vanilla, Greek yogurt, and maple syrup.
- Mix well.
- Add salt, baking soda, cinnamon, and oat flour and stir to combine.
- Add crushed macadamia nuts and mix.
- Brush a loaf pan with coconut oil. Scrape mixture into loaf pan.
- Bake in the oven 45-60 minutes, or until a toothpick inserted in the middle comes out clean.
- Cool.
- Enjoy!
