Sunset, Seafood, and Sips: Summer Inspired Cocktails

There’s something special about summer evenings along Florida’s Gulf Coast. The sun begins to dip below the horizon, friends gather on the patio, the breeze rolls in from the water, and suddenly dinner becomes more than just a meal. It becomes the highlight of the evening.

Whether you’re hosting family at your home in Belleair, gathering with friends at a beach house on Anna Maria Island, or planning a waterfront dinner in Clearwater Beach, seafood naturally finds its way onto the menu this time of year. Fresh Gulf fish, bright citrus, seasonal produce, and refreshing cocktails all come together to create the kind of meal that feels effortless, even if plenty of planning happened behind the scenes.

One of the questions we’re asked most often is, “What wine should we serve with seafood?”

Many people assume the answer is always white wine. While that’s certainly true in many cases, it’s not the whole story.

The best pairing depends on the type of seafood, how it’s prepared, and the experience you want to create around the table.

White Wine Isn’t Always the Only Answer

White wines have earned their reputation for pairing beautifully with seafood because they’re typically bright, crisp, and refreshing. Their acidity complements delicate flavors without overpowering them.

For lighter seafood dishes, some of our favorite pairings include:

  • Sauvignon Blanc with ceviche, shrimp, oysters, or scallops
  • Albariño with mahi mahi, snapper, grouper, or shellfish
  • Pinot Grigio with sea bass and lightly grilled white fish
  • Dry Rosé for warm evenings when you’re serving a variety of seafood and fresh summer vegetables
  • Sparkling Wine or Champagne when you’re celebrating a special occasion or serving a seafood tower

These wines allow the freshness of the seafood to remain the star of the plate while adding bright citrus and mineral notes that complement every bite.

Yes, You Can Enjoy Red Wine with Seafood

One of the biggest misconceptions in the culinary world is that red wine and seafood never belong together.

In reality, the cooking method often matters more than the seafood itself.

A rich, grilled tuna steak has a completely different flavor profile than delicate ceviche. Salmon develops deeper flavors as it cooks, while grilled swordfish has enough texture to stand up to lighter-bodied red wines.

When thoughtfully paired, reds like Pinot Noir, Gamay, or even a lighter Grenache can complement heartier seafood without overwhelming it.

The key is balance. Heavy, tannic red wines can overpower delicate seafood, but lighter reds with bright acidity often create surprisingly memorable pairings.

This is one of the reasons working with a private chef can make such a difference. Every menu is built around the ingredients, the preparation, and the atmosphere you’re creating rather than following one-size-fits-all rules.

Build Your Own Summer Ceviche Bar

If you’re looking for a memorable way to entertain this summer, a Build Your Own Ceviche Bar is one of our favorite ideas.

It’s interactive, colorful, incredibly fresh, and encourages guests to customize every bowl to their own tastes while naturally gathering around the table together.

To ensure every bite is perfectly prepared and food-safe, your chef completes the seafood preparation before guests arrive. Once everything is properly marinated, everyone can enjoy creating their own signature bowl.

Step 1: Choose Your Seafood

Select one variety or create a combination of fresh seafood such as:

Sea Bass

  • Scallops
  • Ahi Tuna
  • Mahi Mahi
  • Shrimp
  • Octopus

Step 2: Prepare the Leche de Tigre (Tiger’s Milk)

The seafood is marinated in a bright citrus blend using fresh juices like:

  • Orange
  • Fresh lime
  • Lemon
  • Ruby red grapefruit

The citrus gently cures the seafood while infusing every bite with vibrant summer flavor.

Step 3: Build Your Bowl

Once the seafood is ready, guests can customize their own creations with fresh ingredients like:

  • Red onion
  • Cucumber
  • Mango
  • Pineapple
  • Avocado
  • Red radish
  • Daikon radish
  • Jicama

Every combination brings its own unique balance of sweetness, crunch, acidity, and freshness.

Step 4: Add the Finishing Touches

Complete each bowl with flavorful garnishes such as:

  • Fresh lime wedges
  • Sweet potato
  • Sweet corn
  • Fresh ginger
  • Microgreens
  • Cilantro
  • Flat-leaf parsley
  • Jalapeño
  • Habanero
  • Chili oil

Step 5: Don’t Forget the Crunch

The perfect ceviche deserves the perfect accompaniment.

Serve alongside:

  • Tortilla chips
  • Plantain chips
  • Crispy fried wontons
  • Sweet potato chips

The result is an interactive dining experience that feels both relaxed and elevated, making it ideal for summer entertaining.

Cocktails That Capture the Spirit of Summer

While wine pairs beautifully with fresh seafood, summer also calls for refreshing cocktails that highlight the same bright citrus flavors.

Some of our favorite pairings include:

  • A crisp Gin & Tonic with fresh lime
  • A refreshing Paloma
  • A classic Blanco Tequila Margarita
  • A traditional Pisco Sour, a nod to the Peruvian roots of ceviche
  • A fresh Mojito with mint and lime

For guests who prefer not to drink alcohol, a citrus-forward mocktail with sparkling water, fresh herbs, and seasonal fruit delivers the same refreshing experience while ensuring everyone has something special to enjoy.

It’s About More Than the Food

The meals people remember most are rarely the ones where everything was rushed.

They’re the evenings where conversation lingered, glasses stayed full, and everyone remained around the table long after dinner had ended.

Whether you’re overlooking Clearwater Harbor, enjoying sunset views from St. Pete Beach, hosting family in Belleair, or gathering friends at an Anna Maria Island vacation home, the atmosphere often becomes just as memorable as the menu itself.

That’s why so many of our clients choose a private chef experience over preparing everything themselves. Instead of shopping, prepping seafood, coordinating timing, and cleaning the kitchen, they get to relax alongside their guests and savor every moment of the evening.

From sourcing fresh ingredients and preparing seafood safely to pairing wines and presenting every course with care, every detail is thoughtfully handled so the host can simply be present.
